Birramisú, tiramisu with authentic SIDAMA flavor

Birramisú, el tiramisú con auténtico sabor a SIDAMA

Tiramisu is the king of Italian desserts, a simple, tasty, and very easy-to-make sweet treat. They have different recipes to prepare it depending on the region of the country you are in. We have our own, with a very special ingredient. We present THE BIRRAMISÚ with SIDAMA beer.

A beer made with coffee from D·Origen Coffee Roasters. A unique coffee from the Guji province of the Sidamo region, in Southern Ethiopia. The Sidama people (natives of Sidamo) have cultivated this coffee for centuries, preserving and respecting the natural process.

And from there, the name of our beer: SIDAMA. A Brown Coffee Porter made with this tasty coffee, with fruity nuances due to its careful elaboration process.

SIDAMA has managed to give a different and very special touch to this famous Italian dessert. If it's already delicious on its own, with this craft coffee beer it's even better. With it, you get the liquor and the coffee all in one ?

Recipe

Ingredients:

6 eggs

4 tubs of 250 gr. mascarpone cheese

120 gr. sugar

1 teaspoon vanilla extract

1 packet of ladyfingers

Unsweetened cocoa or grated dark chocolate for decoration.

1 SIDAMA

Preparation:

Start by beating the egg yolks with half the sugar with a whisk until the mixture becomes whitish. Then add the mascarpone and the teaspoon of vanilla extract, beating again until well integrated and fluffy.

Separately, place the egg whites in a very dry bowl and beat until soft peaks form. Add the rest of the sugar and continue beating until the consistency is a shiny meringue.

Gradually add the meringue to the mascarpone cheese, egg yolks, sugar, and vanilla mixture with gentle, enveloping movements, mixing carefully so that the egg whites do not lose air, until all ingredients are completely integrated. Set aside.

Dip the ladyfingers in the SIDAMA, making sure they are well soaked so that the flavor is noticeable ?, and cover the base of the mold with them. With the help of a spatula, spread a generous layer of the reserved mixture over the ladyfingers until completely covered.

If you like it simple, you can leave it like that. Otherwise, you can alternate another layer of ladyfingers soaked in SIDAMA and another layer of the mascarpone mixture, covering all the ladyfingers again.

Refrigerate for at least 6 hours. If you leave it for the next day, it will taste even better because its flavor intensifies.

After this time, remove from the refrigerator, unmold, and add cocoa on top, and voilà!
