Appearance

Pale straw to golden color with a very thick, long-lasting head, like a mousse. The high wheat protein content reduces the clarity of this unfiltered beer, resulting in a higher turbidity characteristic of the style.

Taste

Banana and clove flavor notes dominate. A very slight vanilla character and subtle notes reminiscent of chewing gum accentuate the banana flavor. Its sweetness is due to the absence of hop bitterness. This beer has a full taste on the palate and a relatively dry finish.

Mouthfeel

Medium-light to medium body, smooth and silky. Suspended yeast can increase the perception of body. The wheat texture provides a fluffy, creamy, and full sensation that can progress to a bubbly finish accompanied by high to very high carbonation. Always effervescent.

Aroma

Moderate to strong phenols (usually clove) and fruity esters (typically banana). Hop character is less noticeable in the background. With a slight wheat aroma (which can be perceived as bread, grain, or pastry), but no other malt characteristics.

A little history…

Bavaria has a tradition that dates back hundreds of years; wheat beer production used to be a monopoly reserved only for Bavarian royalty. Modern weissbiers date back to 1872 when Schneider began production. However, pale weissbiers became popular from 1960. Today it is very popular, especially in southern Germany. Characteristic Ingredients: according to German brewing tradition, at least 50% of the total grist must be malted wheat, although some versions reach up to 70%; the rest is typically Pilsner malt.
